Red Lentil Soup

Quick and easy to make, a full-flavored soup.

  • 1 cup red lentils
  • 1 liter chicken or vegetable broth
  • 2 tablespoons olive oil
  • 1 clove garlic, finely chopped
  • 1 onion, chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper or Sriracha sauce
  • 1 teaspoon turmeric
  • 1/2 cup fresh cilantro
  • Juice of 1/2 lemon
  1. In a pot , heat olive oil and saute the chopped onion, garlic, lentils and spices for 5-6 minutes and stir well.
  2. Add the stock, bring to boil, cover and simmer over medium heat for about 20 minutes about until lentils are tender.
  3. Grind up the soup in a blender to a smooth consistency. Stir in cilantro and lemon juice before serving.
