The coconut flour is very interesting to use because it does not contain gluten, so perfect for those intolerant or allergic to gluten. It also has a low glycemic index and is a good source of protein and fiber. It can be used alone or mixed with other flours in most pastry recipes. However, do not forget to add more liquid to the recipe, because this flour has a high absorbency capacity. If your grocery store does sell it, you can find it in health food stores or Costco.     J’en trouve par chez moi, eureka ! Elle sent si bon. Par contre, elle va me durer longtemps car je n’ai plus goût aux desserts depuis que je mange ig bas.
