This condiment is very popular in Mexico and is also used in Vietnamese and Egyptian cuisines. You can put in tacos, burgers, salads, soups. You can vary the recipe by using white vinegar or white wine vinegar and adding to the mixture a garlic clove or cinnamon stick, bay leaves, a little dried chile, a few peppercorns.
Ingredients:
- 1 cup water
- 1/2 cup apple cider vinegar
- 1 tablespoon of sugar
- 1 1/2 teaspoon salt
- 1 large red onion, or 2 medium thinly sliced
Directions:
- Combine the first 4 ingredients in a bowl until sugar and salt dissolve.
- Put the onions with the other ingredients and let sit at room temperature for 1 hour, then refrigerate. Will keep for several weeks in the refrigerator.
