Quick and easy to make, a full-flavored soup.
- 1 cup red lentils
- 1 liter chicken or vegetable broth
- 2 tablespoons olive oil
- 1 clove garlic, finely chopped
- 1 onion, chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper or Sriracha sauce
- 1 teaspoon turmeric
- 1/2 cup fresh cilantro
- Juice of 1/2 lemon
- In a pot , heat olive oil and saute the chopped onion, garlic, lentils and spices for 5-6 minutes and stir well.
- Add the stock, bring to boil, cover and simmer over medium heat for about 20 minutes about until lentils are tender.
- Grind up the soup in a blender to a smooth consistency. Stir in cilantro and lemon juice before serving.
